A few weeks ago, I took out an ad on craigslist looking for a Kombucha mushroom. I only got 2 replies. One guy was surprised that anyone out in these parts (west-central MN) would know what a Kombucha SCOBY was… much less want one. The 2nd reply I got was from a fellow in the Minneapolis area. After a few emails, he was kind enough to send one… and here she is.
Shortly after Speedy Delivery dropped off the SCOBY (Symbiotic Colony of Bacteria and Yeast), I emailed the guy who sent it. I wanted a fool proof recipe to start with. I DID NOT want to kill our only SCOBY. Shortly thereafter, he called. Carol picked up and spoke with the gentleman. Now knowing that we had never tasted Kombucha Tea, he would send us a bottle of the Kombucha he made. He wants us to taste good fermented tea before trying to make our own. For this, we’re trading him some chicken.
I have read several sources that state that good Kombucha Tea (aka Mushroom Tea) tastes like a combination of apple cider and champagne… I sure hope so.
