Notable Quote:

I know the look of an apple that is roasting and sizzling on the hearth on a winter's evening, and I know the comfort that comes of eating it hot, along with some sugar and a drench of cream... I know how the nuts taken in conjunction with winter apples, cider, and doughnuts, make old people's tales and old jokes sound fresh and crisp and enchanting."
Mark Twain

Apple Fritters

Most folks who love the doughnut holes go crazy over these apple fritters.  These fritters are in the shape of doughnut holes but so much better.  The only thing about them is that if you make them once... you will have to make them again and again.

Ingredients:

Fritters

  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 3/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/3 cup milk
  • 1 egg
  • 1 cup chopped apple

Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk

Directions:

Combine flour, sugar, salt, baking powder and cinnamon.  Stir in milk and egg until just combined.  Fold in apple.  Pour oil into skillet so that it is approximately 1 1/2 inches deep.  Heat oil to 375 degrees F.

Carefully add dough to oil in heaping teaspoonfuls.  Cook until brown, about 2 minutes, then flip over and cook another 1-2 minutes, until both sides are well browned.

Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack

Make glaze by combining the powdered sugar and milk.  Stir until smooth.  Drizzle over fritters.  Wait approximately 3 minutes for the glaze to harden and flip over and drizzle glaze on the other side.  Best when served warm.

Yield: 14-18 fritters
